What about 'veritas'?
Verum and veritas aren't always interchangeable. For instance, "to tell the truth" can translate as verum (or vera, plural) dicere, but the Romans don't seem to have said veritatem dicere (it isn't found in any classical text). In general, veritas means the fact of being true, all truth/reality collectively, or the concept of truth. That isn't what you mean when you say "telling the truth". Telling the truth means telling a true thing (verum) or several specific true things (vera). Verum and veritas still overlap to some extent because verum can also mean truth in a more general sense like veritas.
In the universum sentence, it would have been fine to use veritatis instead of veri but that just wasn't the author's choice. Esthetic considerations may have played a role. The sentence would be less well balanced with the long word veritatis instead of veri. As it stands now, the long word universum is sandwiched between two short ones on each side. Veritatis would break that quasi-symmetry.
